CUCINA YOSHOKU

Cucina Yoshoku was a Japanese influenced Italian supper celebrating the harmonies of summer's harvest at The Pines in Mount Tremper, NY. The idea came from blending two cuisines that are part of the blue zones, regions of the world thought to have a higher than usual number of people who live much longer than average due to their diets and way of life. Blending their cuisines, full of fresh local ingredients, complexities, and umami seemed like a beautiful way to celebrate summer's bounty. Cucina means both kitchen and cuisine in Italian. The term Yoshoku, refers to a style of Western-influenced cooking that originated during the Meiji Restoration.
